Treat of the Week

Hey guys! It's that time of week for a new recipe!!!

To get everyone in the fall mood I decided to do a "Chunky Pumpkin Spice Cookie" for the treat this week!! So here we go!!

Ingredients:
-2 cups of all-purpose flour
-1 cup of white sugar
-1 cup of pumpkin puree [canned pumpkin]
-1/4 of teaspoon salt
-1 teaspoon of baking soda
-1 teaspoon of baking powder
-1 teaspoon of ground cinnamon
-1 teaspoon of vanilla extract
-1/2 cup of shortening
-1 1/2 cups of chopped walnuts
-1 1/2 cups of butterscotch chips
[Optional:
-1 teaspoon of pumpkin pie spice]

Directions:
1. Preheat your oven to 350 degrees and grease/line your cookie sheets.
2. In a medium bowl, cream the shortening and sugar. Stir in the pumpkin and vanilla.
3. Sift together the flour, salt, baking soda, baking powder, and cinnamon; stir into the creamed mixture.
4. Mix in the butterscotch chips and walnuts.
5. Drop dough [using your cookie dropper tool!] onto your prepared sheets. [Don't worry too much about spacing; give them some breathing room, but these ones don't tend to spread out too much.]
6. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool for a minute on cookie sheets before transferring to wire cooling racks.
7. ENJOY!



Now I know these flavors seem kind of out there, but walnuts are always paired with pumpkin, and the butterscotch flavor really seems to work with pumpkin for me. So I thought, why not combine them?? Well, it turned out well and I hope you guys enjoy these delicious fall treats!!

Cookie Dropper Tool!

Hey guys!

I just wanted to tell you about this helpful tool my mom picked up for me the other day. It's called a cookie dropper and it makes shaping cookies a lot less messy. You simply place it into your bowl of dough, scoop up some of it, and squeeze the handle to release the dough onto your pan! How neat is that?

All of your cookies can come out in a uniform shape and you can keep your hands clean while doing it! The cookie dropper has a thin piece of metal on the inside of the scooper which moves from one side to the other when you squeeze the handles, making the dough come right out!

I recommend this tool for anyone who plans to do a lot of baking or who simply does not want to get their hands dirty!

I'm not quite sure how the last one works, but I have seen them before. The second one works pretty much the same as mine, except for the dough is pushed off of the scoop.

Go out and buy one of these tools as soon as you can and enjoy cookies with way less mess!!

Treat of the Week

Hey Guys!
I decided to create a "Treat of the Week" blog every week to give you guys ideas for easy sweet treats! The one for this week is "Cherry 'N Chip Cookies"!

Ingredients:
-2 cups of all purpose flour
-3/4 cups of cocoa powder
-1 teaspoon of baking soda
-1/2 teaspoon of salt
-1 1/2 sticks of butter
-1 1/4 cups of sugar
-2 large eggs
-2 tablespoons of milk
-2 teaspoons of vanilla extract
-1 cup of white chocolate chips
-1 cup of dried cherries

Directions:
1. Preheat your oven to 325 Degrees Farenheight and place foil on all of your baking sheets.
2. In a bowl combine the flour, cocoa powder, baking soda and salt.
3. In a bowl of an electric mixer, cream the butter and sugar for 2 minutes on medium speed. Add the eggs one at a time. Add the vanilla. Add the milk and mix until it is well combined.
4. On a low speed add the flour mixture and mix until it is well combined.
5. Scoop heaping tablespoons of dough onto your baking sheets about 2 inches apart. Bake for 13-15 minutes or until the edges on the cookies are firm.
6. Remove foil from tray and place foil [with the cookies still on it] on the counter. [Doing this speeds up the cooling time because the cookies will stay hot on a hot baking sheet]
7. Enjoy with family, friends and loved ones!

[IF YOU DO NOT HAVE AN ELECTRIC MIXER FOLLOW THESE STEPS INSTEAD OF 3-4!
3. Place butter in a microwave safe bowl and microwave for 30 seconds. Remove and put in a bowl separate from your flour bowl. Add sugar and mix. Add eggs and mix. Add vanilla and mix. Add milk and mix until all of it is well combined. (You can also put all of these things in the bowl at once and mix all together)
4. Add flour mixture and mix until it is well combined.
FOLLOW STEPS 5-7 ABOVE.]

Hint: If your batter is ever too dry or floury add a little bit of water and mix, keep doing so, until it is the right consistency.

Becca's Bites Cookie Company

Hi guys! My name is Rebecca Foley and I am currently trying to raise money to pay my way through the California Culinary Academy in San Francisco. All of the proceeds I make from my Becca's Bites Cookie Company go to paying for my tuition.

I am currently selling large bags for $1.00 and small bags for $0.50. Large bags usually contain 4 normal sized cookies or 6-7 mini cookies. Small bags usually contain 2 normal sized cookies or 4-5 mini cookies.

I make many types of cookies, biscotti and muffins. I am widening my baking horizons and am open to any suggestions people give me. I will bake anything that is suggested by a customer.

I am planning a fundraiser for the Holiday Season involving festive tins filled with a variety of cookies [requested or from a set list]. I will update you all when I have the list of cookies and prices!
